Silverbeet 'Cheesy' Chips

Desperate for some Kale Chips and a garden full of Silver Beet had us experimenting again Man, we could almost taste those chips ! Topping to coat the Silver Beet Chips - a mix of Tamari, Tahini, Water, nutritional yeast, sunflower seeds and sesame seeds You can add salt like Himalayan if you like but taste it first as the Tamari and Nutritional yeast gives it enough salty taste. Coating the Beet with the dressing before dehydrating  Spreading out the Beet in the Dehydrator Trays - I am using a circular one here but a square larger one would work best if you do a lot of dehydrating ( and love Kale/Silver Beet chips!)  Get Dehydrators Finished chips ready and waiting to be demolished in double quick time 

Spiralized Italian Style Zucchini Pasta

This was so delicious we have made it three days running.  The Zucchini Pasta was inspired by  Mimi Kirk's amazing book Live Raw with a few additions and using a Spiral Vegetable Slicer that cuts the Zucchini into long pasta like strings. An amazing gadget that quickly and easily transforms any veggie into a unique dish.  Ingredients almost the same as Pasta with a stack of Basil sprinkled - unfortunately our Basil has been raided faster than it is growing !    

Kale Chips

Kale Chips  You just gotta love them, the way they just nag you until every last one has gone ! Kale chips, like potato chips but way better for you and so moreish you need to make twice as much as you need if you are planning on a shared snack.  Kale chips (aka silver beet as we had no kale  Wash and tear up kale (or silver beet)and remove the tougher stems and they will come out better if you dry them off in a towel or salad spinner Sprinkle over  Sea Salt and vinegar  and toss  Drizzle over one tablespoon of olive oil and toss again  Dry out slowly – in the oven or in a dehydrator These two look like 2 nagging people - love how all the dried “chips” come out so much like people. 

Red Beets in the Sunset Salad

Really getting into the raw foods this summer and doing lots of experimenting. Here's one that we found delectable - juicy, colorful and looked very different. How to:  2 small beetroot - grated  1 large carrot - grated 1 apple - grated 1/4 shredded cabbage  raisins sunflower seeds parsley pumpkin seeds  Mix all the ingredients together and dress with dash of Sesame Oil , olive oil and Balsamic Vinegar 

Raw Food Delectable Lasagne

How to  Make  Layer zucchini sliced in long thin slices using a Mandolin slicer or similar tool. If you don't have one, get one here:  ( Benriner Japanese Mandoline Slicer )   Cover with a layer of tomatoes, the ones above were left over from last nights pizza or raw  fine but saucy tomatoes feels more like a traditional Lasagne  Lettuce layer  Mashed up avocado, seasoning, sprinkle on some basil or thyme  Repeat the layers as many times as you wish and finish off with bright green lettuce, more tomatoes and top with sunflower seeds (dry roasting them first in a pan and add tamari is extra special) We have used some finely sliced cheddar cheese on the top but Feta is great too.   Enjoy ! Super Green High Energy Broccoli Smoothie

Yummy, scrummie smoothie to keep you going and spike up your energy levels.         How To: One Apple Apple Juice about one cup  Water 1 cup  Broccoli Parsley 4 lettuce leaves 2 Bananas  Whizz the whole lot up in a Vitamix Blender until blended and ready to consume on the spot.  Get a   Vitamix 1709 CIA Professional Series, Brushed Stainless Finish  here.

High Energy Salad

A hankering for something clean, fresh and scrunchy had us diving to the fridge to see what we had and came up with this high energy salad with a twist.    Its basically shredded cabbage, sliced carrots ( I used a mandolin to slice finely) sliced cucumbers, toss in a handful of parsley, a couple of tomatoes.   Give it a twist with some pineapple pieces (fresh if you can get them, or canned is OK is you can't.) The dressing was just lemon juice and a splosh or two of olive oil .    Result = Yum
