High Energy Salad

A hankering for something clean, fresh and scrunchy had us diving to the fridge to see what we had and came up with this high energy salad with a twist.    Its basically shredded cabbage, sliced carrots ( I used a mandolin to slice finely) sliced cucumbers, toss in a handful of parsley, a couple of tomatoes.   Give it a twist with some pineapple pieces (fresh if you can get them, or canned is OK is you can't.) The dressing was just lemon juice and a splosh or two of olive oil .    Result = Yum 

Recipe for quick and easy Red Pepper Salad

This is one of the quickest and tastiest salads and if you use all the different colored peppers, yellow, red, orange and green and serve in a glass dish it can look magnificent. How to: Grill or BBQ the peppers until the skin turns black Place in a bag or bowl to steam through enough to make the skin easy to remove. Slice the peppers Add salt and pepper to taste, Sprinkle Olive oil ( or avocado oil is nice too) and vinegar ( I use cider vinegar) Serve with herbs of your choice, spring onions etc

Have More Energy Than a kitten Greek Yoghurt Sauce Chop Spring Onions, Coriander, mint and 2 cloves of garlic Deseed one chilli and add to mix, Fold this all together with yoghurt - try one cup to start and add until you like the taste Add extra chilli sauce - sweet chilli sauce is good. Use with couscous, over patties, on meat loaf, eggplant dishes or whatever takes your fancy. Mushroom and Sage Tart Grill 4 big mushrooms on a bed of sage Place mushrooms on sheet of pastry and cut round each mushroom. This is so the pastry will rise up around the mushrooms when cooked. Brush with egg and lay sage leaves around the mushrooms Brush top again with egg - if you prefer not to use egg skip this step and sprinkle with parmesan cheese Bake 10 - 12 mins in a hot oven.
