Home made Tomato Soup

Discover for yourself how easy this tomato soup is to make and enjoy it whenever you have fresh tomatoes but you can also use canned. Obviously the freshest tomatoes are best ! Melt a large dollop of butter in a pot, slice up onions and garlic ( this is optional as you may wish to add spring onions at the end) and add a heap of tomatoes - as many as your hunger require. ( If you have a lot of spare tomatoes its a good idea to make extra to freeze) I normally don't even skin mine as we like the texture. Add stock - enough to make a thickish soup (or a stock cube if you must use packet ingredients !) but best to add fresh herbs - if you are in a rush just add the sprigs themselves or chop finely if you have extra time. That's it !! Serve with large chunks of toasted rustic bread buttered lavishly and congratulate yourself on a super fast and delicious meal that everyone will absolutely love.

Quick Easy and Delicious Tomato and Egg Slice

This was a spur of the moment dish created after hunger drove us to the fridge from the garden wanting something a bit more than salad. This is really quick to assemble but you need to think a bit ahead for the cooking time but it gives you a chance to relax while it is cooking. Filo pastry - at least 8 sheets but variable according to your appetite ! Grease an ovenproof dish or pan place one doubled over sheet of filo as a base, cover with another folded sheet of Filo pastry, brush on melted butter ( use the microwave to melt quickly) - if you wish add another several sheets of Filo. Work quickly as the Filo will dry out if you take too long. Add several sliced tomatoes and two eggs per person , a handful of what ever herbs you have to hand - tarragon is great with it but parsley, basil is excellent too. Toss in a few slices of cheese ( feta is extra special) and cover with at least 4 sheets of folded over Filo. More Filo is optional ! Brush with butter and bake...

Butter Substitute

Cashew nut butter - delicious in place of butter or margarine 1 Cup raw cashews 1 1/2 teaspoon of salt - Celtic is best 1/4 cup cold pressed olive oil ( I have also used rice bran oil) Enough water to cover cashew nuts in the blender Method: Put all ingredients into blend and blend until creamy and smooth. Apple Butter 6 Apples chopped and peeled + 1/2 teaspoon coriander powder A handful of raisins + 3 Tablespoons water Put all ingredients into a pan and simmer until water is absorbed. Puree in blender till smooth Store in the fridge and use as butter.

Thai Potato Curry - Best Recipe Ever !

Thai Potato Curry 1tsp coriander seeds(ground) 2tsp finely chopped ginger 2tsp finely chopped lemon grass (just put in a crushed stalk if you are short on time) 2tsp finely chopped garlic 2TBS oil 1 cup coconut milk 250 grams potatoes cut in 1″ cubes (no problem if you want to add more or less) 2TBS soy sauce (light is best) 1tsp sugar half tsp salt 1TBS curry powder half a cup of veg stock & 4 small onions In a mortar, pound coriander, lemon grass, ginger and garlic to a paste. Heat the oil, stir in paste and add coconut milk. Stir briefly then add potatoes, soy sauce, sugar, salt and curry. Bring to the boil and add vegetable stock. Add onions and simmer until cooked. This is a really scrummy curry and can be adjusted to your personal taste. The recipe looks longer than it takes to prepare and is a dish you can fling on and sit back relaxing while it cooks.

Noodle Mania

The Great Noodle Craze has come upon us again. Brought on by a sudden hunger and empty cupboard we shot down to our local supermarket and spotted an Asian supply shop right next to the fresh fruit and vegetable shop we usually go to. Fresh seasonal vegetables, noodles, - easy, easy. How come we didn't even notice it before ? Intending a super fast whizz round the place we became enticed by all the packets, and shelves stacked to overflowing with many possibilities and potential meals. We spent so long cruising the shop that the assistant was becoming suspicious of our intentions and kept sidling up and down the aisles watching us. The end result was two huge bags, stuffed to overflowing with noodles of all descriptions and sizes, half the shop and a relieved sales assistant when we produced the money to pay for it.
