Raw Food Delectable Lasagne

How to  Make 
Layer zucchini sliced in long thin slices using a Mandolin slicer or similar tool.
If you don't have one, get one here: (Benriner Japanese Mandoline Slicer) 
Cover with a layer of tomatoes, the ones above were left over from last nights pizza or raw  fine but saucy tomatoes feels more like a traditional Lasagne 
Lettuce layer 
Mashed up avocado, seasoning, sprinkle on some basil or thyme 
Repeat the layers as many times as you wish and finish off with bright green lettuce, more tomatoes and top with sunflower seeds (dry roasting them first in a pan and add tamari is extra special)
We have used some finely sliced cheddar cheese on the top but Feta is great too.
