High Energy Salad

A hankering for something clean, fresh and scrunchy had us diving to the fridge to see what we had and came up with this high energy salad with a twist.    Its basically shredded cabbage, sliced carrots ( I used a mandolin to slice finely) sliced cucumbers, toss in a handful of parsley, a couple of tomatoes.  
Give it a twist with some pineapple pieces (fresh if you can get them, or canned is OK is you can't.)
The dressing was just lemon juice and a splosh or two of olive oil .    Result = Yum
