Quick Easy and Delicious Tomato and Egg Slice

This was a spur of the moment dish created after hunger drove us to the fridge from the garden wanting something a bit more than salad. This is really quick to assemble but you need to think a bit ahead for the cooking time but it gives you a chance to relax while it is cooking.

Filo pastry - at least 8 sheets but variable according to your appetite !

Grease an ovenproof dish or pan place one doubled over sheet of filo as a base, cover with another folded sheet of Filo pastry, brush on melted butter ( use the microwave to melt quickly) - if you wish add another several sheets of Filo. Work quickly as the Filo will dry out if you take too long.

Add several sliced tomatoes and two eggs per person , a handful of what ever herbs you have to hand - tarragon is great with it but parsley, basil is excellent too. Toss in a few slices of cheese ( feta is extra special) and cover with at least 4 sheets of folded over Filo. More Filo is optional !
Brush with butter and bake in a hot oven for around 40 mins. 200 degrees C
Serve with a green salad, lots of fresh herbs and if you are starving add a French loaf
