Vegetarian Cheese and Green Onion Sausages

Cooked  these last night - they are the same recipe as the Vegetarian Sausages Here
but this time I have added spring onions, fennel powder, and  some finely chopped  celery.
Serve with a tomato salsa or home made plum sauce and they will be even better than the last version.

Looking for a quick and easy snack to take for  Shared festive lunches  or to add to a  Barbeque meal ?   Crostini is  the perfect solution.  A plate of freshly topped crisp Crostini  colorful and mouthwatering will have people heading back for more and it doesn't need to cost a fortune to prepare either.  Once you prepare your Crostini they can sit there until you need them and them top them fast and easy with whatever you have in the pantry.   How to ?   Turn oven on to 190 Degrees on Bake while you prepare your slices.  Slice one or two French Sticks or Loaves thinly - how thin depends on how crisp you like your Crostini or how fast they will cook.  Make a few loaves at a time so you always some on hand.  Brush liberally with Olive Oil.  Rub bread with fresh garlic and add to the Olive Oil  *T ip: use oil that already has garlic added to make it easier or you can sprinkle with garlic salt before baking.

Silverbeet 'Cheesy' Chips

Desperate for some Kale Chips and a garden full of Silver Beet had us experimenting again Man, we could almost taste those chips ! Topping to coat the Silver Beet Chips - a mix of Tamari, Tahini, Water, nutritional yeast, sunflower seeds and sesame seeds You can add salt like Himalayan if you like but taste it first as the Tamari and Nutritional yeast gives it enough salty taste. Coating the Beet with the dressing before dehydrating  Spreading out the Beet in the Dehydrator Trays - I am using a circular one here but a square larger one would work best if you do a lot of dehydrating ( and love Kale/Silver Beet chips!)  Get Dehydrators Finished chips ready and waiting to be demolished in double quick time

Healthy Vegetarian Food - Tomato Onion and Zucchini Casserole

 The Healthy Urban Kitchen  has even more quick, healthy recipes In a quick rush tonight and wanted a fast and easy  using up what we already had but fancied something tasty with hardly any dishes to prepare and cook !   A tall order you might think but no, here it is and flexible enough to add more veggies, nuts, any kind of beans to extend the dish or make it extra yummy. Recipe  Tomato Onion and Zucchini Casserole       Serves 6 2 Tablespoons oil  2 onions peeled and finely sliced  1 - 2 Cloves garlic, peeled and finely chopped 500 grams zucchini - cut into 2cm pieces 3 large ripe tomatoes, chopped roughly  ( OK to use either tinned or paste) 1 teaspoon Worcestershire sauce    ( substitute BBQ or other preference) 1 Tablespoon chopped fresh parsley ( or basil, or chopped chives as I have) 1 teaspoon dried basil  freshly ground pepper and salt to taste  Additional extras to add:   Celery, mushrooms, carrots, sweet potato, brussel sprouts, cauliflower, broccoli or anything
